Paleo Carrot Raisin Salad


This light and easy Paleo Carrot Raisin Salad is a delicious combo of veggies, fruits and nuts. It has a fresh, cool taste, and delightful crunch, which makes it perfect as a side dish on warm summer days.

 

The nutritional profile of the Paleo Carrot Raisin Salad is high for such a fast and easy recipe. It is packed with fiber, vitamins A & C, beta carotene, and supplies good amounts of magnesium, manganese, and healthy paleo fats.

 

I found it a snap to grate the Paleo Carrot Raisin Salad ingredients using my food processor. I didn’t peel the carrots nor the apples as I wanted to include the fiber found in the peels of each. I happened to use raw coconut because that is what I had on hand, however you could also use shredded toasted coconut and it would taste just as good. Also, I can’t decide which I like better, using the apples or the pineapple, both taste fabulous.

Paleo Carrot Raisin Salad

  • Prep time:  10 minutes
  • Cook time: none
  • Servings:  6

 

SALAD INGREDIENTS:

  • 5 cups grated carrots
  • 2 cups chopped fresh or canned pineapple, or grated sweet apple (about 2 large apples:  Fuji, gala, golden delicious)
  • 3/4 cup raw or toasted shredded coconut
  • 1/3 cup dried cranberries
  • 1/3 cup dark or golden raisins
  • 1/3 cup walnuts, coarsely chopped
  • 1/3 cup pecans, coarsely chopped

 

DRESSING INGREDIENTS:

  • 1 1/2 cups full fat or lite canned coconut milk
  • 2 TBS. walnut oil, roasted walnut oil, light olive oil, or avocado oil
  • 4 TBS. almond flour, almond meal, or cashew meal
  • 2 tsp. apple cider vinegar
  • 1/2 tsp. salt
  • (optional)  if you like an even sweeter taste – 1-2 TBS. xylitol, stevia drops to taste, coconut sugar, or maple sugar

1) Combine all salad ingredients, set aside.

2) In a jar or any covered container, shake all dressing ingredients together until well mixed, then pour onto the salad.

3) Toss and serve immediately.

 

Paleo Carrot Raisin Salad keeps well if refrigerated, and as the flavors all mingle together, it tastes better and better.
