Paleo Chocolate Chip Banana Muffins (egg-free)

Paleo Chocolate Chip Banana Muffins

I’m a big fan of chocolate, and a lover of banana bread, so I decided to combine the two with a healthy paleo twist: Paleo Chocolate Chip Banana Muffins. These muffins are very moist and chewy, and their little flecks of sharp dark chocolate are a perfect match for their banana goodness.

I like to use 100% unsweetened chocolate bars or chunks, chopped very fine, to almost shavings, for this recipe. Not only do I not want any extra sugar from the chocolate, I think the sharp chocolate taste stands out even more if it is unsweetened. The health benefits of unsweetened dark chocolate are astounding:  high in iron, magnesium, flavonoids and antioxidants, it both improves cardiovascular health and enhances insulin sensitivity.

These Paleo Chocolate Chip Banana Muffins are full of potassium from bananas, and fiber from ground flax meal, dark chocolate and bananas. As healthy and truly delicious as these muffins are, I can’t imagine how anyone would choose to eat chemical, trans-fat ladened muffins, when they could have these babies instead.

  • 1 cup ripe bananas, mashed
  • 1/2 cup pear sauce or applesauce
  • 1/4 cup full fat or lite canned coconut milk
  • 1 tsp. organic vanilla extract
  • 1/2 cup birch xylitol, maple sugar, coconut sugar, or organic maple syrup
  • 2 TBS. coconut oil, butter, ghee, walnut oil, or oil of choice, melted
  • 1/2 cup ground golden flaxseed meal
  • 2/3 cup arrowroot flour or tapioca starch
  • 1 cup blanched almond flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup paleo chocolate chips, dark chocolate chips, or unsweetened dark baking bar chocolate (I use Sunspire Organic Chocolate brand because it has NO soy lecithin), chopped very fine, almost shaved
  • (optional) 1/2 cup dark raisins

1. Pre-heat oven to 375°.

2. In a large mixing bowl, using an immersion or hand blender, whip the wet ingredients on high until very creamy and free of lumps.

3. Stirring by hand, add in the ground golden flax meal, then set aside. (The flax meal will plump with moisture as it rests.)

4. In a separate bowl, mix the rest of the dry ingredients, including the chopped chocolate and the raisins.

5. Now combine wet ingredients to dry, stirring by hand until well mixed.

6. Spoon batter into a lined or well-greased muffin tin, completely filling each cup.

7. Bake for 25-30 minutes, or until knife tip comes out clean.

These Paleo Chocolate Chip Banana Muffins freeze well, so feel free to double the batch and stock up!

In answer to a reader email: the little chocolate pieces on the saucer, in the picture next to the muffin, are TCHO Critters: organic unsweetened dark chocolate baking drops. You can order them on-line or I found them at Whole Foods.
