This darkly luscious Paleo Chocolate Rice Pudding is a chocolate lovers twist on the usual variety of rice pudding. The specially cooked white rice makes for a wonderful way to enjoy the benefits of a paleo resistant starch filled dessert. 1) Place all ingredients, except egg yolks, in a thick bottomed sauce pan over medium heat.

2) Bring to a low-boil, them simmer for 8 minutes, stirring often so bottom does not scorch.

3) Remove from heat, slowly whisk in the 4 egg yolks, one at a time, whisking continuously.

4) Replace pan over medium-low heat and cook an additional 4 minutes, whisking continuously.

5) Pour into parfait glasses, a shallow decorative dish, of any serving bowl you like, then chill 1-2 hours.


You may serve your Paleo Chocolate Rice Pudding plain or garnished with coconut, chopped nuts or whipped cream.
