Paleo Fruit Scone Cookies


  • Prep time:  15 minutes
  • Cook time:  20-25 minutes
  • Servings:  16 cookies



1) Pre-heat oven to 350°.

2) In a large mixing bowl whisk together almond and coconut flours with starch and baking powder until you have a fine powder without lumps. Set aside.

3) In a separate bowl, using an immersion blender, high-speed hand mixer or blender, mix together all other ingredients, except melted butter.

4) When all the ingredients are well mixed and batter is creamy, slowly drizzle in melted butter, while mixing.

5) Add the wet ingredients to the dry, and mix well by hand.

6) Spoon rounds of batter out onto a parchment covered baking sheet.

7) Bake for 22-25 minutes.
