Paleo Granola: Maple Pecan (for Paleo Jake)

Paleo Granola: Maple Pecan

The southern-comfort smell that wafts off this Maple Pecan Paleo Granola when you open the lid, will make you swoon. Memories of the cinnamon rolls, pecan pies, and maple logs I tasted while visiting New Orleans inspired me to create a granola that would be reminiscent of those Big Easy delights.


This Maple Pecan Paleo Granola is yummy by the spoon full right out of the jar. Try it for a quick, tasty snack on the go. Pack it in lunches for a trail mix type of treat. It is really out of this world eaten as a breakfast cereal, with a topping of sliced bananas, and full fat canned coconut milk, or almond milk.


 Maple Pecan Paleo Granola

  • Prep time:  20 minutes
  • Cook time:  45 minutes
  • Servings:  1  1/2 quarts



1. Pre-heat oven to 300°. Cover large cookie sheet with parchment paper.

2. In a large bowl, combine all dry ingredients except raisins, set aside.

3. In a small sauce pan, melt together butter, coconut oil, maple syrup and vanilla extract.

4. When melted, pour mixture over dry ingredients and stir until everything is well coated.

5. Spread granola out over parchment paper covered cookie sheet.

6. Place in oven and bake for 30 minutes.

7. After 30 minutes, remove from oven, toss and stir granola around, then return to oven and bake for an additional 10-15 minutes, or until golden brown.

8. When golden brown, remove from oven, sprinkle currants on top of hot granola on sheet and stir to mix in well.


Allow to cool completely, then store in airtight containers. Delicious topped with coconut or almond milk. Can be stored in freezer for several months, but I bet it won’t last that long!

    I eat this by the handful! But my new fav is putting it on top of banana/almond milk ice cream!
