Paleo Ground Beef Meat Sauce – simple winter comfort food


 

This easy recipe for Paleo Ground Beef Meat Sauce is perfect if you are craving a hearty, filling paleo comfort food on a chilly day. As the leaves start to change and the days grow shorter, comfort foods for dinner come to mind. I start to think more toward soups, stews and meats in my paleo cooking.

 

Paleo Ground Beef Meat Sauce has a thick, flavorful meat sauce that tastes great on its own, our served over resistant starch cooked white potatoes or white rice. Of course I encourage you to use pre-cooked rice or potatoes which have cooled in the fridge, which you then re-heat when ready to eat. This is in order to take advantage of the health benefits of eating the resistant starch within these special form of carbohydrates. Looking for ways to keep your glycemic spikes and insulin levels down and increase your fat burning power? Try to always cook, and then cool overnight, your white rice and white potatoes. This is what is meant by “resistant starch cooked”. The types of rice highest in resistant starch are Uncle Ben’s type – parboiled/converted, and Basmati. Your microbiota and your happy brain will thank you.

 


 

Paleo Ground Beef Meat Sauce

  • Prep time:  10 minutes
  • Cooking time:  20 minutes
  • Servings:  4

 

  • 2 TBS. duck fat, butter, ghee, or bacon fat, or olive oil
  • 2 cups yellow onion, finely chopped
  • 2 cups white or brown mushrooms, finely chopped
  • 1 1/2 cups carrots, finely grated, then chopped (I grate mini, pre-peeled carrots in the food processor, then hand chop them)
  • 2-3 garlic cloves, minced
  • 1 pound ground beef, bison or lamb
  • 1 TBS. Italian spices
  • 1 tsp. salt
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground pepper
  • (optional) 3 TBS. bacon crumbles

1) In a large frying pan, saute the onions, mushrooms and carrots in your oil of choice until very tender, and carrots have become saucy. (By first finely grating, then chopping the grated carrots, they will be liquefied after the simmer process and help make up the sauce. If you need more moisture, add a bit of broth or water.)

2) After the sauteed veggies are very tender, add the minced garlic and saute 3 minutes more.

3) Add the ground beef (and bacon crumbles if you are using them), and the spices, to the pan and cook until just past brown, stirring constantly to break up the beef into small chunks and mix it will with all the rest.

 

Paleo Ground Beef Meat Sauce tasted great served over warmed up resistant starch cooked white potato chunks, or resistant starch cooked Basmati white rice.
