Fairly unknown to many Americans, Paleo Kohlrabi Fries are made from a common vegetable eaten frequently in Europe and Asia. Kohlrabi, often times mistaken for a root vegetable, is part of the cabbage/brassica family. (“Kohl” is the German word for cabbage.)

 

Brassica are a family of cruciferous vegetables known for their disease-fighting properties. They are an excellent source of vitamin C, potassium and fiber. Kohlrabi can be eaten raw or cooked. It has a mild appealing flavor, like a potato with a hint of artichoke flavor.

 

Making Paleo Kohlrabi Fries is a super easy way to prepare kohlrabi if you are new to cooking with it. Kohlrabi is ideal for those following a lower carbohydrate paleo plan, as there are only 8 gms of carbs per 1 cup. You can’t mess this recipe up. Simply peel, slice, season, bake. Easy-peesy!

 

I found my kohlrabi at my local farmer’s market. There are both green and purple skinned kohlrabi (the purple is only the skin color, inside it is creamy white), both are delicious and can be used for this recipe. If you can’t find kohlrabi in your local supermarket, look for it at an Asian grocery specialty store.

Paleo Kohlrabi Fries

  • Prep:  10 minutes
  • Cook time: 18 minutes
  • Servings:  3
  • 4 medium kohlrabi (small or medium-sized have the best flavor)
  • 2 TBS. melted duck fat, olive oil, melted butter or ghee, or oil of choice
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. paprika

1. Pre-heat oven to 475°

2. Peel all kohlrabi. Slice into desired sized fries or wedges.

3. In a large bowl, mix the cut kohlrabi with the other ingredients, until well coated.

4. Place kohlrabi in a single layer on an ungreased, rimmed baking pan.

5. Bake for 20 minutes, or until they are as crisp as you like your fries to be.

6. When done, sprinkle with additional paprika for color, if desired.

 

Paleo Kohlrabi Fries go great with, and can be cooked at the same time as, my Paleo Chili-Lime Chicken Wings.
