As I’ve mentioned before, lemon is one of my favorite flavors. I’m always looking at ways of boosting the lemon taste in my recipes. In these Paleo Lemon Poppy Seed Muffins, I used: lemon extract, lemon juice and lemon zest, to make them literally burst with perfect tangy sweetness.

 

These Paleo Lemon Poppy Seed Muffins do freeze well, if you’re wanting to enjoy a dozen now, and freeze some for later.

Paleo Lemon Poppy Seed Muffins

  • Prep time:  25 minutes
  • Cook time:  35 minutes
  • Servings:  12 muffins

Wet Ingredients:

Dry Ingredients:

 

(Payton’s Paleo 30 Day Challenge friendly if made with xylitol)


1) Pre-heat oven to 375°.

2) Beat all wet ingredients together until foamy.

3) In a separate bowl whisk all dry ingredients together.

4) Combine wet and dry ingredients until well mixed.

5) Fill well-greased, or paper lined muffin tins to almost full.

6) Bake for 32-35 minutes, or until tops are golden brown.
