Paleo Nutella – like Hazelnut Chocolate Spread


 

One of my all time favorite paleo treats is this Paleo Nutella-like Hazelnut Chocolate Spread. Lusciously rich and creamy, made with organic nuts, and maple syrup, this amazing nutty chocolate spread has endless possibilities. Pour some melted over a Paleo Pancake, or a Paleo Waffle, spread a dab on grain-free toast, or eat straight up with a spoon. Any way you like to eat it, you’re sure to love the paleo version of it.

 

My Paleo Nutella-like Hazelnut Chocolate Spread is made using hazelnuts which I have roasted myself. This is a quick and easy process which enhances the nutty taste of the spread. The roasting of the nuts also lowers the amount of phytate (phytic acid) naturally present in them. A high phytate intake in our diet can interfere with our ability to properly absorb minerals such as zinc, iron and magnesium. That is one of the reasons paleo eaters avoid grains and legumes, as they are both very high in phytates.

 

Even roasted nuts, are recommended to be eaten in small amounts only. I find I do okay with a roasted handful or a couple of tablespoons of nut butter every couple of days. Do keep in mind, nuts are not low-calorie , if I go overboard with eating them, my weight can start to creep up. Just be aware of your quantities.

 


 

Paleo Nutella-like Hazelnut Chocolate Spread

 

  • Prep time:  30 minutes
  • Cook time:  15 minutes
  • Servings:  3/4 of a quart jar

 

  • 2 cups organic hazelnuts, roasted, skins removed (you may roast them yourself or buy them roasted)
  • 2 TBS. walnut oil or hazelnut oil
  • 4 squares (2 oz.)  organic unsweetened chocolate (I like Pascha brand)
  • 1/3 cup unsweetened cacao powder
  • 3/4 cup full fat canned coconut milk
  • 2 tsp. organic vanilla extract
  • 1/4 tsp. salt
  • 1/2 cup organic maple syrup
  • 10 drops SweetLeaf liquid stevia

 


To roast the hazelnuts: 

1) Pre-heat oven to 325°.

2) Spread hazelnuts out in a single layer onto a baking sheet.

3) Bake for 12-15 minutes until they are a dark toasted brown color. Allow to cool.

4) Remove the skins from the flesh of the nut by pinching and rolling them in your fingers. Another way to remove the skins is to place handfuls of nuts in a paper towel, scrunch the towel around the nuts, and rub them against each other until the skins fall off.  Little flecks of skin stuck on some of the nuts is fine.

5) Place the skinned nuts into a food processor and process until a very smooth nut butter results. (Bonus: the smell of this still warm, toasted nut butter will fill the kitchen with its amazing aroma.)

 

Making the Nutella-like spread:

1) In a heavy sauce pan, over medium-low heat, combine all the other ingredients, just long enough to melt them together. Stir often to insure even melting.

2) When completely smooth, pour the chocolate sauce into the food processor with the hazelnut butter. Process until well mixed and creamy smooth.

3) Pour into the glass container of your choice. (I use wide mouthed mason jars.) Chill in the refrigerator.

 

I guarantee there will be lots of happy finger and rubber spatula licking during the making of this delectable Paleo Nutella-like Hazelnut Chocolate Spread.
