The Ultimate Paleo Potato Salad, super easy to make and sure to become a paleo classic. Full of potassium and resistant starch it is one hearty, healthy, scrumptious paleo dish.

 

Ultimate Paleo Potato Salad is one of my many recipes that helps encourage the intake of health giving resistant starch on the paleo diet. Don’t be afraid of eating white potatoes while eating paleo! Just learn how to cook them in resistant starch fashion in order to reap the benefits, decrease your carbohydrate absorption, increase your metabolism and burn more fat!

 

Many people may hit a wall of fatigue, depressed mood and hypothyroid problems by eating too low-carb in their paleo diets. This may be due to the lack of intake of soluble fiber. They are starving their microbiome (the healthy bacterial colonies that live in our large intestines). Our gut’s microbiome is a crucial factor in a well-functioning immune system, our ability to burn fats, and fight against autoimmune conditions. Chilled Ultimate Paleo Potato Salad is a great example of a good source of soluble fiber that will feed your microbiome.

 

Anyone who tells you white potatoes (or white rice) “are not paleo” has not kept up on the exploding literature linking resistant starch with a healthy microbiome. The catch is both the white potatoes and the white rice should be cooked and eaten after being prepared in resistant starch fashion for them to benefit your health and keep their amounts of absorbable carbohydrates low.

Ultimate Paleo Potato Salad

  • Prep time:  30 minutes
  • Cook time:  15 minutes
  • Servings:  6

 

  • 2 lbs. organic russet potatoes, or kohlrabi, peeled and cut into 1 1/2″ chunks  (I like to mix these two tubers up for added taste interest)
  • 1 – 2.25 oz. can sliced black olives
  • 1 – 4 oz. jar pimentos
  • 1/4 cup dill pickle relish, or chopped dill pickles
  • 1/2 cup celery, chopped
  • 1/2 cup green onions, chopped
  • 1 cup paleo mayonnaise (I use this brand which is made with avocado oil)
  • 1 TBS. golden mustard
  • 1 TBS. apple cider vinegar
  • 2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground black pepper
  • 4 hard-cooked eggs, finely chopped
  • (optional) 1/3 cup bacon crumbles

1) Peel potatoes and/or kohlrabi and cut into 1 1/2″ cubes. Boil in water until fork tender. Drain, set aside.

2) In a large bowl, combine all other ingredients, then stir in potato chunks to mix and coat well.

3) Chill several hours or preferable overnight. (You may immediately serve the Ultimate Paleo Potato Salad, but you do not gain the resistant starch benefits unless you allow the salad to cool for several hours in the refrigerator letting its carbohydrate structure change with the cooling.)

 

If you need to avoid nightshades or prefer more fiber in your Ultimate Paleo Potato Salad, use only kohlrabi, or mostly kohlrabi, and few, to no potatoes, keeping all the other ingredients the same.
